VÝVOJ NOVÝCH RYBÍCH PRODUKTŮ PRO PŘEDŠKOLNÍ DĚTI

The aim of the diploma thesis was to develop newly innovative fish products. The intention is to increase fish consumption through new developed innovative fish products and proposed recipes. Fish supply healthy polyunsaturated fatty acids (PUFAs) and highly unsaturated fatty acids (HUFAs) to the human body, including eicosapentaenoic (EPA) and docosahexaenoic acid (DHA), which are essential for the proper development of the human organism. 11 new products and 13 new recipes were developed, which were subsequently sensory evaluated by the main target group of consumers. Preschool children were chosen as the target group of consumers, because their consuming habits are established in this life period. The new fish products have met all legislative standards and limits of food safety. Nine products were positively evaluated by the target group. Five products were selected for further analyses (fish balls, fish burgers, fish ham, fish mistura, fish sausages). The issue was theoretically studied according to worldwide research studies. In practice, the project was implemented with coordinated comprehensive cooperation with nutritionists, fish product technologists, but also with preschool facility employees, children and their families. The output of this work are new fish products which are available on the market. Fish products were made from the muscle of African catfish (Clarias gariepinus). The market offer of nutritionally high-quality foods which have a positive impact on human health has been increased. At the same, time several recipes from the African catfish (Clarias gariepinus), the common carp (Cyprinus carpio) and the rainbow trout (Oncorhynchus mykiss) have been proposed as a guide for easy preparation of healthy dishes.
Quality indicators of meat from farm animals

The aim of this diploma work is to evaluate the meat quality of farm-raised deer meat and compare it with the quality of bull beef of identical age and similar breeding conditions, the core factor analysed in this research study is the muscle biochemical composition. A total of twelve deer and twelve young bulls, aged 20-24 months, were included in the experiment. The meat samples were taken from the longest back muscle of the specimens. The samples were subsequently analysed in the university labora-tory to determine the basic values of biochemical composition, namely water and protein content, intramuscular fat content and collagen content. Equally, the colour of the deer meat was measured. The results of water content in deer and beef reached comparable values, in deer the average water content was 75.39 % and in beef 75.66 %. The results correlate with the average water content previously reported in the literature (75-77 %). The protein content of venison was 22.30 % while that of beef was 21.53 %. The intramuscular fat content of deer meat was 0.43 %. In comparison, beef was 1.16 % fatter. The amount of collagen proteins showed the most significant difference. While deer meat contained only 0.73 % collagen protein, beef was significantly richer in collagen proteins, containing an average of 0.94 % collagen. This study found a statistically significant difference between deer and beef meat in the content of protein, fat and collagen proteins, indicating superior nutritional values in deer meat.

The bachelor's thesis deals with the biological properties and requirements for the cultivation of selected species of gooseberry suitable for use in human nutrition as leafy vegetables. Plants of the genus Chenopodium contain a large amount of nutrients, vitamins, minerals, as well as a higher content of protein and fiber compared to other leafy vegetables, and therefore gain considerable attention for a wide range of applications.
Milk and its alternatives

The thesis focused on milk and its alternatives, i.e. plant-based drinks. The theoretical part summarized the nutritional value of milk and its consumption in the world and the Czech Republic. As a source of fats, proteins, minerals, and vitamins, milk is of nutritional value. Furthermore, the importance of milk in human nutrition for different age groups was discussed. Related dietary recommendations and reasons limiting milk consumption were introduced. This included health reasons such as lactose intolerance, cow milk protein allergy or the rarely occurring galactosemia, as well as ethical or environmental reasons. Last but not least, alternatives to milk, i.e. plant-based drinks, were presented. These drinks are based on extracts of legumes, cereals, nuts and/or seeds diluted with water and often supplemented with other additives. The practical part aimed to assess the dietary habits of the general public and nutritionally educated people regarding the consumption of milk and plant-based drinks, including their awareness of the importance of this food in human nutrition. The content of this thesis is the theoretical analysis of the "Healthy alphabet", whose aim is the establishment of healthy living habits in the form of education for preschool-aged children. Based on the theoretical basis of the program, the object of my research is to determine how the program is used in practice, i.e. in kindergartens. The thesis also includes the issue of overweight and obesity in children, which is particularly linked to the lifestyle of the individual. Biomass production and nutritional potencial of Moringa stenopetala and Moringa oleifera species on plantations in southern Ethiopia

In May 2017 a plantation of Moringa stenopetala and Moringa oleifera species was established in southern Ethiopia within the project of „The Implementation of Holistic Landscape Management and "Climate Smart Agriculture" in the Kurpayo river basin, Arba Minch Zuria Woreda, SNNPR, Ethiopia” patronised by Mendel University in Brno. Moringa oleifera is native to the foothills of the Himalayas in north-western India, whilst Moringa stenopetala is native just to southern Ethiopia. These two well-known Moringa genus species are gaining the attention of scientists and the public namely thanks to their exceptionally high nutritional content and the beneficial effect on health. In order to assess the suitability of cultivation on the plantation, the average leaf biomass production and, secondarily, the evaluation of the nutritional potential of both species, two harvests which took place in November 2017 and in March 2018 were carried out. The leaf biomass was harvested from thirty trees in total. Based on the evaluated data, M. oleifera is considered to be more suitable for (growing on) plantations in the conditions of southern Ethiopia, due to pest resistance and high leaf biomass production. The stock of leaf biomass of moringa trees in the open countryside in Kurpayo river basin (114,2 km2) has not been accurately quantified, but it is estimated at 630 419,773 kg of dry matter.
Návrh receptury bezlepkových müsli tyčinek s přídavkem vlákniny

The theoretical part deals with celiac disease, gluten-free diet composition and the importance of fiber consumption in gluten-free diet. The practical part deals with the production of muesli bars from gluten-free raw materials with different percentage of fiber. Two formulations have been proposed in which samples containing 0 %, 3 %, 6 % and 9 % fiber are always prepared. For these products were determined the physical properties, calculated the nutritional values. At the end was performed the sensory analysis. All results are shown by graphs. The best muesli bar was without fiber (buckwheat and rice flakes 1: 1, agave syrup, honey). The strongest was the muesli bar with 9% fiber content (buckwheat and rice flakes 1: 1, agave syrup, honey and wheat fiber). Muesli bars with 9 % fiber content showed the most favorable nutritional composition. The addition of fiber 3 % was evaluated as sensory acceptable.

The bachelor thesis on topic „Evaluation and production of various kinds of flakes“ is divided into several parts. In the first part are described conditions of cultivation, chemical and anatomical composition of suitable cereals for making flakes. The next part is about nutritional values, starch and fiber content. The last practical part describes the production of flakes on the home appliance Duett 200. The sensory questionnare for the assessment for flakes was created. The best according to questionnare were flakes of oatmeal, the worst were flakes of buckwheat.
